Oatmeal Cookies

Today I'm sharing my flourless, chocolate chip, & peanut butter cookies!! I created this recipe one night when I had a huge craving for cookies, but I was lacking a handful of ingredients needed for classic chocolate chip cookies. I didn’t have flour or vanilla extract and I only had one egg. The cookies turned out pretty good, so I tweaked a few things and kept making them. It’s now my go-to cookie recipe and I thought I’d share with you guys! Since there's no flour, I always tell myself they’re healthier (ish) and maybe even eat a couple extra ;) Oh and the hubs loves them which is always a bonus! can't resist the dough

Ingredients:

  • 1/4 cup butter- don’t melt it!! Make sure it’s cold when you mix it.

  • 1/2 cup of natural peanut butter- I like Jif Natural Creamy PB

  • 1 large egg

  • 1/2 cup sugar

  • 1/2 cup brown sugar

  • 1 tsp. baking soda

  • 1/4 tsp salt- unless your peanut butter is really salty, then adjust according to taste

  • 2 cups oats- I use one minute Quaker Oats- I’ve found that 1 minute instant oats work best here. If you use old fashioned rolled oats, the cookies usually don’t stick together well.

  • 1/2- 3/4 cup chocolate chips- adjust depending on your taste for chocolate. I also LOVE adding butterscotch chips here too!

  • You can also add cinnamon, vanilla extract, raisins, or anything else you’d like to spice them up- but this is usually what I use :)

Instructions:

  1. Preheat the oven to 350F.

  2. Beat the butter, peanut butter, and egg until smooth

  3. Add sugar, brown sugar, baking soda, and salt- beat until smooth

  4. Add oats and beat or stir until fully mixed

  5. Stir in the chocolate chips/butterscotch chips

  6. Place on a nonstick pan... I have found that mine don't spread out too much when baking, so I place them pretty close together

  7. Bake for 9-11 minutes and let cool

I have a tendency to over bake and I prefer my cookies on the softer end, so I only bake mine for about 9 minutes.
